Words from a Southern Cook

CREAM CORN

 

Cut off the tips from the kernals of corn.

Flatten your knife and scrap down the side,

to get all the juice the cobb has inside.

Add in some salt and a touch of pepper too.

Then add bacon grease, maybe a spoon or two.

 

Don't forget to taste your stew,

that's the thing a real cook would do.

 

FRIED GREEN TOMATOES

 

Slice your tomatoes in fairly thick pieces.

Batter them up in flour and seasons.

Make sure your grease is plenty hot,

before you place them into your pot.

Turn down your heat as they start to cook.

Don't flip them over until they have a crispy look.

 

The cleaner your grease, the better they will cook.
